Fairy Cupcakes

Tonight, I attended a neighbour's daughter birthday party. It was a BBQ styled party and the wife's a Romanian so I expect a lot of Romanian dishes. Therefore, I decided not to make any salads or marinated anything to bring over. Instead I baked some Fairy Cupcakes. I posted the recipe in my other blog a few months ago.

Since it was a little girl's (she just turned 1) birthday do, I decorated the cupcakes with white and pink buttercream toppings. I'm no expert in decorating cuppies, nowhere near the likes of Zaitgha, Sweetlily, Aunty Yochana and the rest, but I think they (the cuppies I made and decorated) can still delight the children. Boleh la tuu....cukup makan..

Sebelum sempat di bawa pergi ke rumah jiran, tiga empat bijik dah kena ngap dulu oleh anak2 Wlily.

Ingredients :

3 large eggs
1 cup caster sugar
1 1/2 cup flour - all purpose
3/4 cup vegetable oil / butter
1 tsp vanilla essence
1 tsp baking powder
1/4 cup fresh milk

To make buttercream :

125 gram icing sugar - sieved
1 - 2 tablespoon warm milk
75 gram butter - softened at room temperature
Vanilla essence
Food colouring

Directions :

1. Pre heat oven 180C. Sift flour together with baking powder.
2. On high speed, beat eggs and vanilla essence until smooth.
3. While mixing, slowly add sugar, then butter or vegetable oil.
4. Throw in the flour mixture and mix, first using the spatula then continue to mix at moderate speed.
5. Lastly add in milk and beat until the desired consistency is achieved.
6. Line baking tray with cupcakes, pour in the batter and bake 20 - 25 minutes or until the top is slightly brown.

To make buttercream :

1. Whip butter and icing sugar until well mixed, then continue to beat at high speed until smooth.
2. Add in warm milk and beat at moderate speed for a minute or two. Add in vanilla essence and coloring of your choice, beat again. Sppon the batter into piping bag and decorate the cuppies anyhow you like!

Alahai Kak Izzah

apasal sakit kepala? Migraine macam Wlily jugak ke? Susah kan kalau selalu sakit kepala ni?

Ada masa nanti, why not try this recipe ya, the batter is not sweet and the buttercream complements the taste nicely. Ni bagi tahap tahap amatur macam kita ni la ok ;)
