Pumpkin Soup

This is my Anjang Rakayah's recipe (my auntie). First learned about it during my summer holiday in Malaysia when I visited her in Lundu, a small town about 2 hours ride from Kuching. I was pleasantly surprised to learn something from that visit. Thanks Anjang!

This is the second time I made this soup during Ramadhan month. I like the gravy, smooth, thick, there's the sweetness of the pumpkin, aroma from the chicken - an exotic combination! Try it!


Honestly, it should not be this color, it should be more orangy - just like a pumpkin's color. Maybe its the pumpkin here in Abu Dhabi that's different. Doesnt taste as sweet too. I'll use the Indian Pumpkin next time. But if you're in Malaysia - the shade (if you are particular about it) and the sweetness will turn out just fine!



Bahan 2 :


1/2 biji labu (yang sederhana besar)

4 ulas bawang merah dihiris nipis

2 ulas bawang putih dihiris nipis

Rempah tumis (bunga lawang, sapu laga, cengkih, kulit kayu manis)

Sedikit isi ayam (bahagian dada) - dipotong dadu atau sederhana besar.

Garam secukup rasa.


Cara Membuat:


1. Rebus labu sehingga empuk- jangan di buang kulit.

2. Setelah empuk, ambil isinya dan blend.

3. Tumis bawang putih , bawang merah dan rempah ratus sehingga wangi.

4. Masukkan labu yang telah di blend tadi. Biar mendidih.

5. Masukkan sedikit air dan ayam yang telah dipotong. Tabur garam secukup rasa.

6. Setelah ayam masak - angkat dan hidangkan.

7. Taburkan bawang goreng dah daun sup / daun bawang yand dihiris halus sebelum menjamu selera.

Pernah tak makan labu yang di beli dari ladang di Cameron Highland? Kata penjual tu ianya labu Jepun.Saya ada membeli nya tahun lepas dan akak dapati ianya sangat lazat bila buat gulai atau pengat. Sangat halus isi nua. Tapi labu ni bermusim kata penjual tu. Hmm tak tau bila lagi dapat merasai labu ni.

Tak pernah pulak rasa buah Labu Jepun. Mesti best ni kalau guna Labu Jepun untuk buat pumpkin soup ni.
